Today, we’d like to share some fun facts about one of the most popular items on any yakiniku menu: beef tongue!✨
Just like harami, beef tongue is actually classified as a type of horumon (offal). 😳
And it isn’t just one solid cut—the tongue is divided into different sections, each with its own unique taste and texture.
Let’s take a closer look at the four main parts of beef tongue and what makes them special‼️
🥇 [Tanmoto] – The Most Luxurious, Melt-in-Your-Mouth Cut
The “tanmoto” comes from the base of the tongue, a very limited and rare part.
Because it doesn’t move much, it has fewer sinews and is richly marbled, making it incredibly tender and juicy.

- Jo-Shio Tan (premium salted tongue)

🥈 [Tanchu] – The Perfectly Balanced Classic
Located in the middle of the tongue, the “tanchu” offers an ideal balance of lean meat and fat.
It has a satisfying bite and rich flavor, making it the most common and familiar beef tongue cut you’ll see at yakiniku restaurants and supermarkets.

🥉 [Tansaki] – For Those Who Love a Chewy Texture!
The tip of the tongue, “tansaki,” moves the most, making it lean and muscular with a firm, chewy bite.
Often used in stews, but at Suzuki, we serve it grilled for you to enjoy its robust texture!🔥
💥 [Tantsura] – A Hidden Favorite Among True Fans
“Tantsura” comes from below the tanmoto.
It contains more sinews and veins, making it a bit tougher, but it’s packed with deep, savory flavor that many find addictive‼️
It’s also known by names like “Tan-shita,” “Tan-geta,” or “Tan-karubi.”
